What does Vitalik mean when he says Blockchain can replace Uber?

A quote I've heard time and time again from Vitalik relates to how blockchain can replace platforms like Uber:

"Whereas most technologies tend to automate workers on the periphery doing menial tasks," Buterin says, "blockchains automate away the center. Instead of putting the taxi driver out of a job, blockchain puts Uber out of a job and lets the taxi drivers work with the customer directly."

I'm a software engineer and I struggle with this idea in practice. How do you imagine it playing out? Isn't there an inherent requirement for there to be a software platform that enables the interaction between the driver and the customer which will require improvements, maintenance, security updates, response to feature requests, arbitration when things go wrong, customer services etc. And if that's the case then wouldn't we expect that platform to take some commission as payment for that work? Or is the argument that the cut for the platform should be significantly smaller?
