Crypto Currencies for Learning?

Although I have owned crypto for the past 3 years, my knowledge is still very limited and I have been buying it as a blind investment on Coinbase. I want to start learning more about creating my own wallet and and making transfers, or whatever in a low risk way for the purposes of learning. I know there are YouTube videos out there, but I prefer something more tangible like using an actual crypto currency that I don’t have to worry about scams or anything else like that. Does anyone know of any projects like that or any currencies I could experiment with?
